El cónclave giró en torno al análisis de las actividades desarrolladas a lo largo de 2009-2010, así como pensando y trabajando ya en las de 2010-2011. <br />Al frente de los congregados se encontraba el presidente de la agrupación -quién además lo es de la asociación nacional-, <strong>Pablo Martín</strong>, quien destacó de la convocatoria que «sobre todo hemos hablado de una cosa importante que nos preocupa, que es la formación». Subrayó la importancia de la búsqueda de nuevos valores, «gente joven que se introduzca dentro de la hostelería para poder formar y ser en el futuro sumilleres importantes».
